La comida del fin de semana (25/02/2012)

Estando hoy a martes, está claro que voy algo atrasada con el blog.  Y no es que no tenga nada que contar, es que me falta tiempo para todo lo que quiero hacer y siempre que cojo el ordenador (procuro que no sea muchas veces) se me van unas cuantas horas.

Este fin de semana pasado no hice mucho de comida.  Lo mejor de todo fué una crema de espárragos verdes que salió buenísima. Hice también unas hamburguesas de pavo pero aunque estaban buenas tengo que mejorarlas.  Fruta y ensalada han sido el resto del acompañamiento.  Todo esto fué el sábado porque el domingo fuimos mis padres, mi hermana y yo a comer a la playa.

Este es un experimento.  Tenía una bolsita de tomates secos que caducan pronto y he decidido meterlos en un bote con aceite y ajo.  Vamos a ver que tal.




Well, being today Thusday I am as always quite behind with my blog.  And it is not for the lack of nice things to show you but because I just have not enough time for all things I want to do.  I am also always afraid very time I use my computer (I try not to do it very often), because whenever I "play" with it times fly and I spent more time that I want to.

I haven't done much cooking this past weekend.  Just some asparagus soup, a turkey hamburger and some green salad and some fruit.  The soup was really good, I love it, and although it was quite nice I still have to improve the turkey hamburger recipe.

I've also try something.  I had some dried tomatos that I bought a while back and expiration date is in soon so I decided to put the dried tomatos in a glass jar with olive oil and some garlic.  Well see how it goes.

Bufandas, bufandas, bufandas.





Hacía mucho que no publicada nada de crochet.  La razón:  en enero no he hecho nada de nada.  Después de los regalos de navidades me tomé en enero unas merecidas vacaciones. 


Después de mis vacaciones, empecé a dar vueltas a qué podía hacer.  Lanas no tenía muchas pero sí tenía las que compré en Londres en Noviembre y una que me había sobrado del año pasado y que era de la misma marca y también había comprado en Londres.  Son todas de la marca Rowan y 100% lana.  Es un gustazo trabajar con ellas. 


¿Qué hacer con cuatro madejas y sin posibilidad de comprar más en estos momentos? 
Una bufanda de rayas.


Aunque parezca increible hice y deshice la bufanda unas pocas de veces hasta que quedé contenta con la combinación final.


Ayer por la noche, sobre las 12, la terminé por completo.  Estoy contenta con mi bufanda porque no tengo nada igual.   


Las otras dos bufandas son el resultado de mi compra de lanas de hace un par de semanas.  Llevaba dándole vueltas a la idea de hacer dos bufandas para mis sobrinos.  Mi madre me ayudó a elegir los colores de ambas. 

Esta se supone que es para el niño.


Y sí, también hice y deshice un montón de veces.  Al principio llevaba otro color más, otro azul, pero no me convencía por más que variaba el orden de los colores. 


Esta se supone que será para la niña.  Me recuerda a Halloween.



Esta al principio me parecía algo chillona.  Igual, probé añadiendo amarillo, añadiendo rojo, cambiando el orden ... al final volví al principio.  ¡Qué trabajo me cuesta siempre combinar colores!  Ahora que la veo terminada me encanta y además al no ser rosa se la pueden intercambiar.


Lástima que la cámara no recoja bien los colores.

Las tres las terminé anoche.

After Christmas I took crochet holidays and that is one of the reasons I haven't done much. 

Then when I started thinking what to do next, I found I had some Rowan yarns that I bought last November and November 2010 in Liberty in London.  So, what to do with four yarns?  A scarf.  This is for me.  I don't have anything like this in my wardrobe.  I did and undid it don't know how many times until I was happy.  It is just that I cannot imagine the result of the final combination. I finished it yesterday night at 12. 

The other two scarfs are for my nephew (blue and white) and my niece (green and orange).  These were made using the yarns I bought at the beginning of this month and my mother helped me choose the colours for both of them.  And again, I did and undid them so many times.... I tried mixing other colours for the green and orange one as I thought it was a bit "loud".  But in the end I went back to the original colours two green and orange and I am very happy with it.  With the blue one I began using these three colours and another blue as well.  But I wasn't happy and tried changing the order of them and everything until I took that blue out and let it with these three colours.  I am very happy with it as well.

This is the first time I crocheted this picot stitch.  I think I need to practice it a bit more.  No problem I still have lots of yarn left.

Pan para el fin de semana (24/02/2012)

Mi amiga MMF me estaba preguntando hoy por mis panes para el fin de semana.  Los hice ayer pero terminé tan tarde que no dió tiempo a subirlos al blog.  Pero aquí están.

Esta semana ha habido de todo:  con uno me quedé encantada y emocionada, el bollito, con el otro quedé menos encantada, el de masa madre.  Y con el último, aunque me pareció que quedó ayer muy bien, hoy pienso que es mejorable:  el de molde.


Mi preferido.  Aquí voy a ponerme muy supercursi, pero de verdad, qué alegría más grande me dió este bollito.  Es el primer bollito que hago bien.  Estaba super blandito y riquísimo de sabor. 



Y aquí el resto de los panes: un pan de masa madre al 100% y uno hecho con levadura y buttermilk.




La idea era sólo hacer el pan de masa madre.  A principios de semana estuve refrescando mi masa madre que la veía ultimamente algo dormida.  Así que le dí unas cuantas veces de comer (harina y agua) y listo.  El martes mezclé todos los ingredientes (masa madre, centeno blanco, harina Allison con semillas, agua y sal) y dejé en la nevera hasta ayer tarde. 

¿Por qué no estoy contenta con este pan?  Por dos razones o despistes tontos.  Lo primero es que una vez que formé el pan y lo metí en el bannetón no lo tenía que haber tocado más.  Pero se me ocurrió la "brillante idea" de sacarlo de nuevo del bannetón para pegar mejor la unión del pan.  ¿Qué ha ocurrido?  Pués que esta mañana al cortar el pan para llevarme la mitad a casa de mis padres, había unos cuantas burbujas o agujeros (nada pequeños) dentro del pan.  Esto es un poco molesto a la hora de comer el pan.  Lo segundo es que fué el último pan que metí en el horno y ya era algo tarde, luego claro, cómo estoy haciendo varias cosas a la vez, pués en lugar de tener 10 minutos el horno con sólo el calor (creo que se llama de solera?) de la base del horno y luego cambiarlo al calor de arriba y abajo, yo lo tuve unos 30 minutos con el calor inferior a toda potencia.  Olí algo a quemado pero pensé que era otra cosa.  Para cuando me dí cuenta el pan está algo "oscuro" en la base.  Esta mañana a las 7 he raspado un poco para que no se vea tanto.  Espero que esté bueno ya que todavía no lo he probado.


En general no es nada grave ya que el resto se ve bien, como el color de la corteza, y lo único quemado es la corteza, peores panes saqué el año pasado del horno y unos pocos fueron directamente al cubo de la basura, pero siempre da algo de coraje. 




De entrada sólo iba a hacer un pan esta semana, el de masa madre.  Pero ayer por la mañana, buscando por internet recetas con buttermilk, para utilizar otro que hice el lunes semana , encontré una receta en el blog o web de Ma Petite Boulangerie de pan de molde y bollitos hechos con buttermilk en panificadora.  Me entraron muchas ganas de probar a hacer un pan parecido y cuando llegué por la tarde saqué mi panificadora y puse:



  • 300 gr. buttermilk ( y un pelín de agua que tuve que echar porque ví la masa muy seca)
  • 250 gr. harina de fuerza
  • 250 gr. harina panadera (harina normal, no es de fuerza ni de repostería)
  • 2 cucharaditas de sal
  • 1 cucharadita de azúcar (porque el buttermilk es algo ácido)
  • 1 cucharadita de levadura seca (no tenía fresca, sino hubiese puesto 10 gr.)

En la panificadora dejé que amasara y que fermentase.  Cuando comenzó a amasar de nuevo saqué la masa.  He utilizado la panificadora esta vez, porque por un lado la tengo ahí muerta de risa ya que para panes con masa madre no es lo mejor y porque me recordaron que la panificadora dá algo de temperatura tanto para el amasado como para la fermentación.  Esto último con estos fríos que está haciendo es lo que me decidió a sacar el trasto del armario y ponerlo a funcionar.  Estoy todo el día fuera de casa y mi cocina está muy fría cuando llego.  Así que las masa tardan mucho más en fermentar (en doblar volumen).  De esta forma, está más controlado y no tardó tanto.  El único inconveniente de la panificadora es que me gusta que los panes lleven un poco más de hidratación (65 - 70%) por lo que a los 500 gr. de harina le hubiese ido mejor 325 o 350 gr de líquido.  Pero la panificadora no amasa muy bien cuando lleva más de un 60% de agua o líquido (por eso 300 gr de buttermilk).



Después de desgasificar la masa (para que no sepa a levadura) la dejé unos minutos hecha una bola antes de cortar los panes y formarlos.  Lo que tardé en lavar la cubeta y las palas de la panificadora, la espátula para sacar la masa y guardar el cacharro en su armario.  Después corté formé un rulo y corté un trozo para formar el bollito ya que quería probar a cocer en el horno un bollito.  Así que por un lado forme un rolo para el molde y por otro una bolita para el bollito.  Los dejé ambos tapado unos 45 minutos el bollo y una hora y cuarto o así el pan de molde. 



El horno lo puse esta vez a 200º C.  Los dos panes los pinté con buttermilk y al bollito le eché sésamo por encima.  Cuando el bollo estuvo en el horno, vaporicé los primeros minutos.  Al pan de molde le hice una tapadera con papel de aluminio y como fué tapado no tuve que vaporizar.  El bollo tardó unos 25 minutos y el pan de molde unos 35-40 minutos.

Cuando se fueron enfriando fuera del horno estaba los dos superblanditos.  Probé la mitad del bollo y me encantó el sabor del pan.  Está buenísimo.  Normalmente los panes con levadura me resultan algo sosos, este tiene mucho sabor.  Hoy he cortado el de molde (en casa de mis padres) y lo he probado.  Igualmente, está muy bueno de sabor.  Hoy sin embargo no está tan blando como ayer que casi no se podía coger.  Creo que le falta líquido.

Here they are:  bread for the weekend.  This time I had mixed results.  One came out very good, I am really happy with it (the small round bread), one came ok, at first I was happy but today I am think I can do better (the sandwich loaf) and one came not so ok although you cannot see in the photo (the one made with sourdough).

First I thought this week I was going to bake only the sourdough loaf.  So I refreshed my sourdough a few times at the beginning of this week so it was strong for the baking.  On Tuesday night I put together all ingredients (sourdough, Allison seeds flour, rye flour, water, salt and some extra seeds) I mixed everything, left it an hour or two in the kitchen and then I put it in the oven until yesterday when I baked it.  Why am I not happy with it?  Two reasons and both my fault.  First of all I moved the dough after I let it seat for a second time.  This morning when I cut the bread I found few big holes (bubbles) inside.  This is not so important because the bread tasted the same with or without holes but it is not nice.  Second reason is that because it was the last loaf to go into the oven, and I was doing many things at the same time, I forgot about the oven and the bread and instead of having it 10 minutes with the heat coming out only from the bottom of the oven (at 250ºC) I had mine 30 minutes before I saw what was happening.  I did smell it in advanced but I didn't think it could be the bread.  Well the bottom of the loaf is a bit "dark".  It is also not that important because it is only the crust at the bottom and I baked worse loaves, but it is not nice.

The other two breads are the same dough.  Yesterday I was looking for recipes for my buttermilk as on monday I made another batch of it.  I found a recipe in a Spanish blog that I wanted to try.  It is a dough using buttermilk instead of water or milk.  Here are the ingredients:

  • 300 gr. buttermilk (I had to add a bit of water as well)
  • 250 gr. strong bread flour
  • 250 gr. flour
  • two teaspoon salt
  • one teaspoon of sugar
  • one teaspoon of dried yeast

I used the bread machine for this one as lately my kitchen is so cold it takes twice the time for the dough to rise. The problem with the bread machine is that you cannot put more liquid because then it doesn't knead well.  I used it to knead the dough and to let it rise for the first time.  After that I took the dough out to shape the loaves.  I make the round one to try baking a small loaf.  I don't know why I found them a challenge.  They are more difficult than baking a big loaf.  This time the oven was at 200º C. 

Yesterday I was really really really happy with the small one.  It is the first time I bake it right.  It was very soft and delicious.  It had a lot of flavour something that I don't usually find in breads when using yeast.  When I took the sandwich bread from the oven it was very soft as well, it was almost imposible to hold.  Today I took it to my parents.  I cut it and tasted it.  It tasted very well and it is still soft but no so much as yesterday evening.  I think next time I will add a bit more liquid (milk or water) to the dough. 

Anyway I did like this last recipe and  since I now have buttermilk in the fridge I will try again soon.






Mas cuadritos de cereales.

Este miércoles hice de nuevo cuadraditos o barritas de cereales . No las hago mucho porque precisamente "light" no son, pero sí de vez en cuando ya que están muy bien para un desayuno rápido, un tentempié o una merienda.

La receta es la del libro de Nigella Lawson "Nigella Express".  Leche condensada, copos de avena, arándanos secos y coco rallado.  Llevan también canela ya que me gusta mucho. Todo a ojo.  Sólo hay que calentar un poco la leche condensada, mezclar con los copos de avena y resto de ingredientes y al horno.   En el horno los tuve esta vez a 130ºC durante una hora. 

Una vez fuera del horno hay que dejar que se enfríe unos 15 minutos antes de cortar los cuadraditos.

Sí decidís probar la receta:  "comerlos con moderación".  ¿Qué peligro tiene?  El primero es que cuando lo empiezas a comer dices: "Umm, no está mal", y cuando lo terminas dices:  "qué bueno está" seguido de "quiero otro".  El segundo peligro es que conforme pasan los días están todavía mucho más buenos. 


I think in English are called "flapjacks".  I bake them from time to time as they are not particularly "light".  But I like baking them because it can be a fast breakfast or a nice bite in a moment of sugary need. 

In Spain we don't have this type of recipe so I took this recipe from Nigella Lawson's book "Nigella Express" Breakfast Bars.  They are incredibly easy to make.  Just condensed milk, rolled oats, dried cranberries (or dried berries) and some shredded coconut. I put some cinammon as well because I like it a lot.  I don't measure anything I just warm the milk a bit and add everything until I see there are enough of everything.  One hour at 130º C in the oven.  After cooling about 15 minutes, cut squares or bars.

Everytime I eat one, I always find myself thinking at first  "they are not so bad", when I finish eating the same square I think "Ohhh, they are delicious I want more..".  So be aware if you decide to try baking them. 

Nigella Lawson says in the book that with time "... they seem to get better and better".  Well... this is true, I know it for sure.

La comida del fin de semana (19/02/2012)

Como el sábado estuve todo el día fuera, no he tenido necesidad de cocinar mucho este fin de semana.  Lo único que he hecho esta mañana ha sido hacer puré de brecol.  El brecol lo compré ayer fresco y además de otras verduras he añadido un curry que me traje de la tienda inglesa.  Estaba muy bueno.




También he hecho unas cuantas galletitas de avena y sésamo.  Está muy ricas y tengo que hacer esfuerzos para no comérmelas todas hoy.


Y más o menos esta ha sido la comida de hoy domingo, puré de brecol, ensalada de pimientos, pan con queso y una manzana. Y para compensar y que la cosa no sea tan saludable, aunque no hay foto, también me he tomado uno de mis brownies.  Tengo que decir que están mejor que el primer día.




Because I spent Saturday out I haven't done much cooking.  This morning I cook some brocoli soup with other vegetables and some curry I bought in the English supermarkt yesterday.  I baked some oatmeal cookies.  These are really delicious and I have to make real effort so I don't eat all today.  And this is all. 

For lunch I had the soup, some salad, bread and cheese and an apple.  And because everything I had was so healthy I decided to have one of my chocolate brownies.  They taste even better than the first day.

Yogures, buttermilk y leche fermentada

La noche del sábado la dediqué a los lácteos.  Todas las semanas preparo yogur casero, utilizo un yogur casero de la tanda anterior, leche fresca semidesnatada y unas cucharadas de leche en polvo (tenéis la receta aquí: 2011/09/yogur-casero.html ). 





Ayer además con el buttermilk que había comprado hice más ya que el que compré tiene una fecha de caducidad muy corta y no lo puedo conseguir cerca de casa.  Leí hace tiempo una receta de como hacer más buttermilk y al final es sólo cuestión de mezclar un parte de buttermilk con leche fresca.  Yo puse unos 100 gr de buttermilk dentro de la botella y añadí unos 300 g. de leche semidesnatada, agité y lo dejé en el horno junto a los yogures ya que necesita una cierta temperatura para que fermente.  Esta mañana estaba perfecto.  Sabe muy bien, me gusta mucho más que incluso el comprado. 



Igualmente tengo ultimamente (a falta de buttermilk) leche fermentada en la nevera.  Esta consiste en leche fresca con una cucharadita de creme fraiche o nata fresca que se deja, también, en un ambiente con cierta temperatura para que fermente.  La leche se vuelve más espesa y algo ácida y queda parecida al buttermilk.  La utilizo a veces para las magdalenas o bizcochos.  Hago más poniendo más leche y dejándolo unas horas a cierta temperatura.  En esta ocasión he aprovechado la temperatura del horno para los yogures. 

Once a week I prepare yogur.  Yesterday evening I prepared it with some milk, some powdered milk and a yogur (from last batch).  I leave them inside the oven (preheated about 10-15 minutes at 50ºC and then turned off).  You can find some pictures of the process here http://lastardesdeana.blogspot.com/2011/09/yogur-casero.html.  I am sorry it is not translated, it is kind of hard.

I also prepared more buttermilk.  I cannot find it near my house, so as yesterday I found and bought it I decided to make more and have it the fridge.  A while ago I read in some web that for making more you only need a part of buttermilk and fresh milk and some temperature. So I put 100 gr buttermilk inside a bottle, and added 300 gr. milk and stirred it.  I left it the whole night inside the oven with the yogur.  This morning it was done.

I also have made more of a kind of a fermented milk I have always in my fridge.  I did it with creme fraiche and milk and use it instead of buttermilk when baking.  I only have to add more milk to make more of it.  Yesterday I add more milk and put inside the oven with the yogur and buttermilk. 

Sábado (18/02/2012)

Ayer mi madre, mi hermana y yo nos fuimos de compras juntas.  Unas cuantas veces al año vamos un sábado a Marbella, por la mañana a un centro comercial y después a comer y a dar un paseo a Puerto Banús.  Ayer fué el día.  Lo pasamos muy bien y aprovechamos mucho.

Comer, comimos de los lindo, en la misma Pizzería de Puerto Banús que la última vez.  Yo creí que nos sobraría comida, pero fué que no.  Una gran ensalada para mí (Cesar), una hamburguesa para mi madre, la pizza para mi hermana y gran parte de la ensalada que aparece en aquí abajo.





 




Y para terminar, dos crepes:  uno relleno de chocolate (el mío) y otro con fresas y nata para mi hermana que lo acompañó con un té.  Y no, no estaban malos...





Y después de la comida, un paseíto por el puerto.  Aunque el día se despejó, hacía frío.  

















Y estas son algunas de mis compras.  Harinas y productos ingleses.  Paramos de camino a Marbella en un supermercado inglés (Iceland) quería comprar sobretodo harinas para mis panes.  Tienen mucho surtido y las harinas son muy buenas.  Aproveché para comprar otras productos que son difíciles de encontrar en supermercados españoles como el "buttermilk" o algunas especias.




On Saturday my mother, my sister and me spent a very nice day out.  Last time we went together shopping was in November.  We usually go to Marbella where we visit a shopping center.  After that we drive to Puerto Banus and have lunch there.  This time we did it all over again.  First we went to the Shopping Mall and after that we went to lunch.  Yes, as you can see we were quite hungry.  I had the Cesar salad, my mother the hamburger and my sister the pizza and most of first salad.  And because it is always nice to end with something sweet, we had two nice crepes (mine with chocolate) for dessert.

After our lunch we went for a walk.  It was a bit cold for us but still quite nice.

The last picture are somethings I bought.  We went in the morning to an Iceland, that is an English supermarkt near Málaga.  I like the flours I can find there.  I need them for my baking.  I also bought somethings that I cannot find in Spanish supermarkt such as buttermilk.
