Pan para el fin de semana (14/01/2013)

Este sábado pasado estábamos invitadas a ir al campo a comer. Cada uno debía de llevar algo y a mí me encargaron pan.  Mi hermana me recomendó hacer pan blanco por si con centeno no gustaba a todo el mundo.  Al final no fuimos al campo pero una masa de pan ya la tenía hecha desde el jueves y es el pan que horneado este fin de semana.



Es un pan de masa madre hecho exclusivamente a base de harinas blancas de trigo lleva unos 300 gr de harina de fuerza ecológica y 200 gr de harina panadera (las dos de El Amasadero) en total los 500 gr de la receta básica.  Además lleva 200 gr de masa madre de trigo blanco, 10 gr de sal y 300 gr de agua. Esta vez, porque me apetecía y quería practicar, amasé de lo lindo hasta que más o menos vi que la masa estaba en condiciones. ´

Para el horneado seguí las instrucciones que había dado en el Foro del Pan mi amiga MMF y la verdad es que quedé encantada con el resultado del horneado.

Donde fallé fué en el formado porque cuando corté el pan este tenían alguna que otra burbuja grande, aunque creo que esto se debió también a que no eché suficiente harina en el banetton y la masa cuando la volqué se quedó algo pegada.  Pero vamos que no ha pasado nada, nos lo hemos comido igualmente. 



El pan ha salido bueno.  Porque estoy ya más acostumbrada a los de centeno, éste en principio me pareció algo soso pero el domingo cuando lo probé para desayunar con ajo, aceite y sal lo encontré buenísimo y tuve que contenerme para no comer más de la cuenta. 

Además de pan, y hice unas torrijas para aprovechar un pan de molde que hice el fin de semana pasado.


Unos scones con queso.  Bueníiisimos sobretodo recién sacados del horno.  Estoy poniendo dos tazas de harina con levadura (una harina inglesa que tengo), una taza con buttermilk y algo de agua, un trozo de mantequilla, un pelín de sal, un pelín de bicarbonato, queso rallado frances, tomillo y un poquito de mostaza en polvo.  Se desmenuza la mantequilla en la harina y se añaden todos los ingredientes secos.  Lo último que se añade es el líquido, es decir, el buttermilk y el agua.  Se amasa muy poco, yo prácticamente solo he mezclado un poquito.  Se dejan caer montañitas de la masa sobre papel vegetal para horno y listo.  Horno a unos 220º durante unos 12 minutos o así.  Esta vez como tenía huevo que me había sobrado de las torrijas pinté los scones con el huevo pero sino nada con un pelín de leche se pueden pintar también.






Hice además un bizcocho al que le eché todo lo que se me ocurrió y más pero no estaba para subirlo al blog ya que no subió bien y además se me tostó algo más de lo deseable.  Por supuesto aunque no lo he subido al blog esto no quiere decir que lo haya tirado ni mucho menos porque está muy rico ; ).


This last weekend I was invited to go to a picnik.  I was really tired and in the end I didn't go.  I had already made some bread dough for the picnik so this was our loaf for this weekend.

The loaf is made with white leaven or sourdough (sorry because I never know what is the correct name).  It's done with white wheat instead of rye.  I usually don't make loaf as white as this one but as it was going to be for a picnik I wasn't sure abut rye, specially because here in Spain peaple are not used to rye.  A part from 200 white leaven, there's also 500 gr white flour (300 strong white flour and 200 regular white flour), 10 gr. salt (2 teaspoon) and 300 gr water.  I usually don't knead but this time I felt like kneading so I did it until the dough was more or less ok (the truth is that I finished kneading when my back and arms started to hurt : ) ).

I made the dough on Thursday evening but I baked it on Saturday morning.  I followed some new instructions my friend MMF had left in "El Foro del Pan" which is a Spanish community about bread.  I did like how it turned out a lot and from now on I will do it that way.  The only problem I had was that I think I didn't shape the loaf well and that I didn't put enough flour in the baneton and the dough got stuck a bit before going into the oven.  So I go a few big holes in the bread.  A part from this the loaf is nice and it is perfect for a Spanish breakfast, I mean, with a bit of garlic, olive oil and salt.  Another thing I like about this loaf is that because I didn't put any yeast the loaf lasts more days.

I made some "torrijas" (kind of french toast) with some old bread I had and some cheese scones which I love a lot.  They are really delicious and so easy to make.  The recipe I followed for this scones is:  two cups of self-raising flour, one cup of buttermilk and some water,a piece of butter, a bit of salt and a bit of baking soda, some cheese and a bit of mustard (English mustard).  I combined the butter with the flour and then add all dry ingredients to it.  After that I put the buttermilk and water and mixed everything but I don't knead, just mixed more or less everything.  Then I put the dough on a oven paper (small montains) and bake them for 12 minutes or so in the oven at 220º C.

I baked a cake as well but it didn't come out too well and there's no photo of it because it wasn't very pretty.
