Last week was the Saint of the name of my sister.  I don't know how to explain this better. In Spain, as I told you last week, we celebrate the day of the Saint of our name.  It is almost like a birthday but you are not a day older.

I haven't had time enough to think for a present for my sister.  I had done a lot of cross-stitch and some crochet for my mother's present I hadn't had time for anything else.  But last weekend I found two yarns from the crochet shawl I did for my mother in May.  I remembered that my sister wanted a scarf with the same yarn.  So, because I had not much time left I decided to look for a nice and simple pattern and I found the one you can see in the pictures.  I am quite happy with the result.  It looks very pretty.  My sister is the one in the picture, she didnt' expect the scarf and therefore she was very happy with it.

Apart from the scarf my sister asked me to make a cake for her day.  I made a very easy cake.  Lately I alwasy baked the same sponge cake (eggs, sugar, butter and flour) and then I put inside some nice homemade strawberry jam and some whipped cream, and covered the cake with chocolate (70% cacao) melted with some double cream.  We loved this cake.  Best thing is that I can bake the cake one day, next day I can put the filling and cover it with the chocolate and have it in the fridge until the following day.  This is Ok with me because I just have many things going on lately that I don't have much time left for other things.

I was lucky and the cake arrived safely to my mom's home.  I am always quite nervous transporting the cake from my place to their's.

I must remember next time to take some pictures of the cut of the cake so you can see it.  I forget this always.... ; )

Because I had to melt the chocolate I took the oportunity to melt a bit more and on Friday I did some chocolate ice-cream.  This one is very easy to make, just double cream, milk, chocolate, sugar and the ice-cream maker.  Yesterday we tried it and was really good as well.

This last week I was quite busy and I thought that I wasn't going to bake any bread because I wasn't going to spend the weekend at home.

In the end, on Friday morning at 7 a.m. and before going to work I decided to make some dough following some advice I have read in "El Foro del Pan" which is a forum about bread.  I didn't have much time so basically I put in a bowl 500 gr flour (leftovers from different types of flours),  325 gr water, 10 gr salt and 2 tablespoon of (last week) sourdough.  I mixed as fast as I could, covered the bowl with a plastic shower cap and left the bowl in the kitchen.  I went to work and I came back around 5 p.m.  It is quite hot here in Málaga so the dough has risen a lot and it had probably fermented more that it should have but anyway I shaped two loaf and put them in a oven tin.  Let them for an hour before putting them in the oven.

I was very happy with the final outcome.  I got two nice loaf and they were quite nice.  Best part however is that it was so easy and fast to make the breads this way !!

Size 12 and ready to rock de Meg Cabot
The Forgotten Garden de Kate Morton

He disfrutado mucho leyendo el libro.

This last month I have read:

Once Burned by Jeaniene Frost
Size 12 and ready to Rock by Meg Cabot
The Forgotten Garden by Kate Morton

Once Burned by Jeaniene Frost has been my favorite book this last month.  I had a lot of fun reading the adventures of Vlad and Leila and I am already looking forward to their next book.  I started a saturday and next day I finished it.  I coudn't stop reading it.  This is kind of a "spin-off" of her Bones and Cath series. It is a very nice reading for summer.

Size 12 and ready to rock by Meg Cabot is the fourth book in her Heather Wells series.  I read the first books a few years ago and I laughed so much with them !! They were really a lot of fun.  This is not as funny as the previous book but is still fun to read and I had a nice time.

I just finished the Forgotten Garden by Kate Morton.  I started this book because it looks that it could be interesting and because I wanted to read something else, different from what I am lately reading.  When I was between page 80-100 I already saw I wasn't going to enjoy reading it as much as I thought.  I just don't know if it is the way the story is divided or if the story is just to dark for summer.  There is also a mistery, the central point of the story, but by the middle of the book I already knew what it was and any way at that point I couldn't care much about the story or the characters or any other thing.  All I wanted to do is finish the book and move to the next one.  I just don't have as much time as I would like for reading and for doing many things I want to do and I don't like wasting my time in a book like this but I know sometimes just happens.  Well, I read it and most important finished it so now I could move on to the next book.

I am still reading and enjoying Drums of Autum by Diana Gabaldon but her books are so big that I like to read something else while reading it.  Let's see if I can finish it this month.

Chal veraniego

Last week I worked real hard on this shawl so I could finish it in time.   This is a present for my mother.  It is a green shawl for the summer.  As I told you in the post before Thursday was Saint Ana and it was our day as we are both name Ana.  In Spain we still celebrate this kind of things with presents and cake, just like a birthday.  Some names are more popular than others.  I am always amaze to see how many people remember that is Saint Ana and congratulate us on our day.

It is a pity you cannot see the real colour because it is a very beatiful dark green.  The yarn was Mondial and it was cotton.  It's being really nice to work with this yarn.

I am quite happy with the result and so is my mother.

My name is Ana and my mother's name is Ana as well.  This Thursday was Saint Ana (July 26th).  In Spain we celebrate  the day of our Saint.   This year I decided to make something instead of buying a cake or another dessert.

In the end I decided to make tiramisu.

I learnt this recipe in Germany when I was there studying as an erasmus many many years ago.  At that time in Spain we didn't know anything about tiramisu and there was no way to find mascarpone in the shops.

I think there are two ways of making tiramisú.  One recipe uses eggs and double cream and another recipe uses just eggs.   I follow this last recipe, the one that only needs eggs.

The ingredients are:

  • three eggs
  • 250 gr mascarpone cheese
  • 100 gr sugar
  • some extract or sugar vainille (I didn't put any)
  • coffee
  • cacao powder

The first thing I do is coffee so when I am ready it is not too hot.  I did coffee for 5 or 6 cups but you may need more or less depending on how big you want to make the tiramisu.

Next I separate the white from the yolks of the eggs (as you can see in the first photos).  I think this is maybe the difficult part of this dessert.

I put the sugar (brown and a bit of white as you can see) and the mascarpone cheese with the yolks.  I use the electric mixer and first I mount the egg white and after that I mix the cheese cream.  After this combine both things carefully so the egg white doesn't lose all the air.

In the coffee one can put some liqueur.  The correct thing is Amaretto but is OK with some brandy or some anis (Marie Brizart) that was what I used.

Now it is time to put the tiramisu together.  First of all a row of these long biscuits (sorry don't know what they are called in English but I put a photo of the package so you can see what I mean).  These long biscuits go first in the coffee and then on the tray.  Then goes the cream.  You can repeat this as many time as you can, it just depends on how deep is the tray or recipient you are using.  I put two layers of biscuits and two layers of cream.

When there is no more space for another layer I sprinkle some cocoa powder on top on the tiramisu.  I used cocoa powder without sugar but if you can used other types that are a bit sweeter than this cocoa.

The tiramisu needs to stay in the fridge for at least two hours.  It is a cold dessert so it needs to be kept in the fridge.

The tray I did is for six or even eight people.

This is the loaf for this weekend.  This time I used very little wholemeal flour just what was in the sourdough.  And because this type of dough is really nice to work with, I kneaded the dough.  I don't usually knead because I just don't have enough time for this or sometimes I just don't feel like doing it.  Another reason is that I usually put a lot of rye flour and with this type of flour is very difficult to knead the dough.

Esta mañana he hecho magdalenas. Esta vez he añadido zanahoria y he puesto harina de espelta blanca.

Last week I made cheese cake.  My cousin Antonio gave me this recipe a few years ago when we went to visit him and his family.  I love this recipe because it is really easy to make and perfect for the summer.

The ingredients for this cheesecake are:

  • 300 gr Philadelphia cheese or other cream cheese.
  • 250 ml milk (a glass)
  • 100 gr sugar
  • 50 gr butter
  • 1 egg
  • 50 gr flour

One could also put a base made with cookies and butter and then cover the cake with strawberry jam, but I think just the cheese cake is quite nice and don't need extra calories.

Mixed everything well and put in a cake tin.  I put some oven paper in mine so it is easier to take out of the tin when is done.

Oven at 180º C for about 40 - 45 minutes.  Once the cake cool down put in the fridge for a few hours.

Today I baked some muffins as well.  I used more or less the same recipe as always.  This time I put spelt flour instead of white flour (wheat) and carrots.  I have just tried one and they are really good.

Then I don't know why, it must be that it is too hot, but yesterday I made a "empanada" or a pie and I forgot to make a photo, and it was quite beautiful...!!  Well, I just remember and took it out of the fridge and is what you see in the last photo of this post.  As you can see it was quite delicious and there's not much left for today.  The filling of this pie or empanada is onion, green pepper, tomate sauce homemade (fresh tomatos, onions and garlic), and some tunafish.  The ingredients for the dough of this pie were:  300 gr flour, 75 gr of white wine and 75 gr of olive oil and salt (although it doesn't need it).  I knead this dough a bit and then left for an hour or so in the fridge.  I only used a half of the dough, the rest I freezed for another time.  Oven at 180º for 30 minutes or so, depending of how thick you shape the dough for the pie.
