Pan para esta semana (19/12/2012)

El domingo viendo lo que quedaba de pan decidí preparar más masa. 

Este pan lleva 200 gr. masa madre de centeno integral, 400 gr harina Hovis Granary, 100 gr harina de centeno blanca, 360 gr de agua y 10 de sal.

La preparé el domingo a mediodía y tuve que retardar en frigorífico ya que hacía frío y después de unas 5 horas a la masa todavía le faltaba tiempo. 

Ayer por la mañana, saqué la masa del frigo y la dejé fuera un tiempo para que no estuviera fría al formar el pan.  Hice igual que la semana pasada y dividí la masa en dos que fueron a un molde cada una.  Tapé con papel de aluminio y dejé así mientras se precalentaba el horno a 250º C.

Una vez que el horno llegó a esa temperatura, metí los dos moldes tapados.  He hecho  igual que otras veces, es decir, he precalentado con el turbo pero al meter los panes he dejado sólo encendido la placa de la base del horno, para que el calor suba.  Esta vez no eché cubitos de hielo ni agua porque al ir tapados los moldes no hace falta.  A los 10 minutos, he puesto el calor arriba y abajo (sin turbo).  Así ha estado unos 25 minutos más.  He bajado a 220ºC, he quitado las tapaderas y he dejado el pan entre 5 - 10 minutos para que se doraran.

Al estar tapados el pan sale bastante blandito ya que la corteza es más fina.  Me gustan mucho las rebanadas pequeñas y cuadradas que salen de este pan.  Estaba y está muy bueno.







As I have some holidays and I am staying home I have to bake more bread.  On Sunday, seeing what was left I decided to prepare more dough.  Ingredientes were:  200 gr. leaven (rye), 400 gr Granary Hovis flour, 100 gr white rye flour, 360 gr. water and 10 gr. salt.

It was cold on Sunday and because the dough didn't grow as fast as other times (after 5 hours was still low), I put it inside the fridge and let it be until Monday. 

Yesterday I took it out of the fridge and let sit on the kitchen counter a bit until it wasn't so cold.  Then I shaped the dough and divided it into two bake tins.  I covered them and let them while the oven preheat at 250ºC.  Them I put the two tins (covered) inside the oven.  The first 10 minutes I had the oven with the heat coming only from the bottom.  After that I put the heat so it came from the top and the bottom and let it another 25 minutes.  Then I uncovered the breads and lowered the oven at 220ºC and let them for 5 - 10 minutes more.

I do like the shape of slices of this bread, they are small and square, perfect for a sandwich.  Today there's only half left.
