This morning I've visited my blog and was surprise to find that I haven't posted anything since Thursday.  Well, here it is what I've eaten this weekend.

Last week I bought pumpkin.  I don't usually cook pumpkin much. It is basically because two reasons, first one is that I find it too sweet for a vegetable and the second reason is that I bought it once and when I was going to cut it, I was really worry because it was very hard to cut with the knive.  I don't get along with knives and after that experience I haven't bought it again.  But last week I was reading in www.elforodelpan.com some recipes (muffins and cakes) with pumpkin and people were saying that they put the whole pumpkin, wrapped in foil in the oven for about two hours and this way it was really easy to use it.  So on Friday evening I bake the half pumpkin I have bought for about an hour and half and it came really nice.  So soft, that I only need a spoon to take it.

I have used my baked pumpkin for a soup and for some muffins.  The rest I have put them in my freezer.  For the soup, I used some vegetables such as leeks, onion, celery, carrots and a zucchini.  I put some garam masala, some turmeric, dry ginger,  black pepper and a bit of chilli.  I think spicy makes this soup really nice and also not so sweet.

On Saturday morning I went shopping and when I came back I didn't feel like cooking much.  So apart from heating the pumpkin soup I had a soy burguer.  I like this type of burguer (I know it is not really burguer) and I like to have them in my fridge because it only takes a few minutes to have them ready.  I had them with a mayonaise that I did with some yogur, garlic and a bit of lemon juice.  The burguer , in the photo, is under the red onion.  I had the burguer with some chips.

And again, I didn't want to waste anytime with the fruit so some kiwi and some pomegranate that I have in my freezer.

Then because it is being really cold this weekend I decided to make some cheese frosting for the cake I baked on Thursday.  I don't know what it is about this frosting but I like it a lot.  This time I just mixed some philadelphia cheese (cream cheese) with some sugar (the one for frostings) and a bit of lemon juice.  It is probably not the real frosting but as I said it is my favorite.   I must say that I didn't eat everything at once (although I could have), there's still a bit of cake left.
