El pan del fin de semana 7/10/2011

Normalmente hago pan dos veces por semana pero esta semana ha llegado visita familiar y no me he organizado tan bien como otras veces.  Estos dos panes de molde son para la familia, uno para una casa y el otro para otra.  Tengo otra masa en el frigo que será el pan que me quede. 

Estos dos panes son la misma masa dividida en dos.  Los ingredientes son:

  • 500 gr harina Hovis para pan, esta es una harina integral de trigo de fuerza
  • 350 gr agua
  • 200 gr masa madre (100 gr de la de centeno y 100 gr de la de trigo blanca)
  • 10 gr sal



Como ando un poco justa de tiempo estos días, la masa la mezclé y amasé un poco el miércoles por la noche.  Estuvo un par de horas en la encimera y luego fue al frigo durante toda la noche.  El jueves por la mañana, a eso de las 6:30 (cuando me levanté y antes de ir a trabajar), dejé un ratito la masa fuera, y luego formé los dos panes y los dejé cada uno en un molde forrado con papel de horno.  Fueron de nuevo al frigo a pasar el resto del día.   

Por la tarde cuando llegué, saqué los moldes y encendí el horno a 250º.  Cuando pasó media hora y el horno ya había alcanzado los 250º los metí en el horno tapados con papel de aluminio.  Dejé 25 minutos a 250º.  Pasados ese tiempo, le quité el papel alumunio y bajé la temperatura a 220º y los dejé otros 25 minutos más.


Me gusta siempre sacar foto de como queda el corte, es decir, de la miga, pero como no me quedo con ninguno ...

I do usually bake bread twice a week.  This week however I have family visiting us in Málaga and I haven't got much time. 

For these breads I have used Hovis flour, the one you see on the picture.  It is the first time I am using it.  The ingredients are:

  • 500 gr. Hovis flour for bread
  • 350 gr. water
  • 200 gr. sourdough (I think it is called this way) at 100%, which means the same amount of flour than water
  • 10 gr. salt

Because I don't have much time, I mixed everything on Wednesday evening, I kneaded a bit, cover it with plastic film (I don't know how you call it) and let in the kitchen for a couple of hours .  Then I put it in the fridge and let it be the whole night. 

Thursday morning at 6:30, that's the time I have to get up every working day, I took it out of the fridge, formed two rolls, put it in the bake tin and put them back in the fridge. 

At 19:00, that was the time I got home, I preheat the oven at 250º C, and took both bake tin out so it wouldn't be too cold before going into the oven.  30 minutes later the oven was 250ºC and I put both 25 minutes covered the same way I did with the bread from last week.  After those 25 minutes I uncovered both, put the tempeture at 220º and let them there for another 25 minutes. 

I like to take pictures of the cut of the bread I bake but this time I couldn't do it because I am giving both breads.
